Ingredients

  • 4 medium fresh ripe tomatoes
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 medium, finely chopped red onion

Directions

Step 1

Wash and remove the seeds from the tomatoes. Finely chop the tomatoes and place them in a colander to drain excess liquid for about 10 minutes.

In a mixing bowl, combine the chopped tomatoes, red onion, parsley, oregano, salt, pepper, and crumbled feta cheese (if using). Mix well.
