Ingredients

  • 900 grams ripe tomatoes
  • 200 grams granulated sugar
  • 50 grams brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground ginger
  • 0.25 teaspoons ground cloves
  • 0.5 teaspoons salt
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Wash the tomatoes thoroughly, remove the cores, and roughly chop them into small pieces. If desired, peel the tomatoes by blanching them in boiling water for 30 seconds and then transferring them to an ice bath to easily remove the skins.

Step 2

Place the chopped tomatoes into a large, heavy-bottomed saucepan.

Step 3

Add granulated sugar, brown sugar, lemon juice, apple cider vinegar, ground cinnamon, ground ginger, ground cloves, salt, and red pepper flakes (if using) to the saucepan and stir well to combine.

Step 4

Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent the sugar from sticking to the bottom.

Step 5

Reduce the heat to low and let the mixture simmer gently for 45-60 minutes, stirring occasionally, until it thickens to a jam-like consistency. The jam should be glossy and hold its shape when scooped with a spoon.

Step 6

To check if the jam is ready, place a small spoonful on a chilled plate and let it cool for 1-2 minutes. If it sets and wrinkles slightly when pushed with your finger, it’s ready. If not, continue cooking for a few more minutes.

Step 7

Once thickened, remove the saucepan from the heat and allow the jam to cool for a few minutes.

Step 8

Transfer the tomato jam into sterilized glass jars or an airtight container. Let it cool to room temperature before sealing and refrigerating.

Step 9

Store the jam in the refrigerator for up to 2 weeks. Serve as a spread on toast, sandwiches, or pair with cheese and crackers for a delicious snack.
