Ingredients

  • 500 grams ripe tomatoes
  • 100 grams honey
  • 1 tablespoon lemon juice
  • 50 grams brown sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground cinnamon
  • 100 milliliters water

Directions

Step 1

Wash the tomatoes thoroughly and remove the stems. Dice the tomatoes into small chunks.

Step 2

In a medium saucepan, combine the diced tomatoes, water, and salt. Cook over medium heat for about 10 minutes, stirring occasionally, until the tomatoes soften and begin to break down.

Step 3

Use a hand blender or regular blender to puree the tomato mixture until smooth. If you prefer a chunkier texture, skip this step.

Step 4

Return the puree to the saucepan and add honey, brown sugar, lemon juice, and ground cinnamon. Stir well to combine.

Step 5

Reduce the heat to low and let the mixture simmer for 30–35 minutes, stirring occasionally, until it thickens to a jam-like consistency. Be sure to scrape the bottom of the pan to prevent sticking.

Step 6

Remove the saucepan from heat and let the tomato honey cool slightly.

Step 7

Transfer the tomato honey to sterilized jars while still warm. Seal tightly and let cool completely at room temperature before storing in the refrigerator.

Step 8

Enjoy your tomato honey as a sweet and savory complement to breads, crackers, cheeses, or even roasted meats. It can be stored in the refrigerator for up to 2 weeks.
