Ingredients

  • 4 cups All-purpose flour
  • 6 tablespoons Tomato paste
  • 2 tablespoons Olive oil
  • 1.5 cups Warm water (110°F/43°C)
  • 2 tablespoons Sugar
  • 1.5 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Garlic powder
  • 0.25 teaspoons Crushed red pepper flakes (optional, for a touch of heat)
  • 1 Egg (for egg wash, optional)
  • 1 tablespoons Water (for egg wash)

Directions

Step 1

In a small bowl, combine the warm water and sugar. Sprinkle the active dry yeast over the top and stir gently. Let it sit for 5–10 minutes until frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour, salt, dried oregano, dried basil, garlic powder, and crushed red pepper flakes (if using). Mix well.

Step 3

Add the tomato paste and olive oil to the yeast mixture and stir until smooth.

Step 4

Pour the wet ingredients into the flour mixture and mix to form a sticky dough.

Step 5

Turn the dough out onto a lightly floured surface and knead for 8–10 minutes, adding small amounts of flour as needed, until the dough becomes smooth and elastic.

Step 6

Place the dough in a lightly greased bowl and cover with a clean kitchen towel or plastic wrap. Let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 7

Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan (or shape it into a freeform loaf and place it on a baking sheet lined with parchment paper).

Step 8

Cover the dough loosely and let it rise again for 30–40 minutes, until puffy.

Step 9

Preheat the oven to 375°F (190°C). If desired, prepare an egg wash by whisking the egg with a tablespoon of water and brush it over the loaf for a golden crust.

Step 10

Bake the bread in the preheated oven for 25–30 minutes, or until the loaf sounds hollow when tapped on the bottom and the top is golden brown.

Step 11

Remove the bread from the oven and let it cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely before slicing.

Step 12

Serve warm or at room temperature. Enjoy your homemade Tomato Herb Bread!
