Ingredients

  • 200 grams Cherry tomatoes
  • 2 pieces Garlic cloves
  • 60 milliliters Olive oil
  • 15 milliliters Red wine vinegar
  • 10 grams Honey
  • 5 grams Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 30 milliliters Water

Directions

Step 1

Rinse the cherry tomatoes under cold water and pat them dry.

Step 2

Peel the garlic cloves and slice them thinly.

Step 3

In a small skillet, heat 15 milliliters of olive oil over medium heat. Add the sliced garlic and sauté for 1-2 minutes until fragrant and golden brown. Remove from heat and allow it to cool slightly.

Step 4

In a blender or food processor, combine the cherry tomatoes, sautéed garlic (including the oil), red wine vinegar, honey, Dijon mustard, salt, black pepper, and the remaining olive oil.

Step 5

Blend the mixture on high until smooth. If the dressing is too thick, gradually add water until the desired consistency is achieved.

Step 6

Taste and adjust seasoning if needed, adding more salt, pepper, or vinegar to suit your preferences.

Step 7

Pour the dressing into a clean jar or bottle. Use immediately or store in the refrigerator for up to 5 days.
