  • 4 medium Ripe tomatoes
  • 2 liters Water
  • 1 teaspoon Salt (optional, for blanching water)
  • 10 pieces Ice cubes

Directions

Step 1

Bring a large pot of water to a boil. Add a teaspoon of salt, if desired, to season the water.

While the water is heating, prepare an ice bath by filling a large bowl with water and adding the ice cubes.

Using a sharp knife, gently score an 'X' on the bottom of each tomato. This will make it easier to peel the skin after blanching.

Carefully place the scored tomatoes into the boiling water and blanch them for 30 seconds to 1 minute, or until you see the skin starting to peel away from the flesh.

Using a slotted spoon, immediately transfer the tomatoes to the ice water bath to stop the cooking process.

Once the tomatoes have cooled in the ice bath (about 1 minute), remove them and pat them dry with a clean towel.

Peel the skin off the tomatoes, starting at the scored 'X'. The skin should come off easily. Discard the skins.

Cut the tomatoes in half horizontally and gently squeeze to remove the seeds. You can use a small spoon to scoop out any stubborn seeds if needed.
