Ingredients

  • 500 grams chicken breast
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 3 medium tomatoes, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 0.25 cup water
  • 2 stalks spring onions, chopped

Directions

Step 1

Slice the chicken breast into thin strips. In a medium bowl, combine the chicken, cornstarch, salt, and black pepper. Mix well to coat and set aside.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and stir-fry for 3-4 minutes until lightly browned and almost cooked through. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced ginger and garlic, and stir-fry for 30 seconds until fragrant.
