Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 3 medium Carrots, peeled and sliced
  • 4 large Tomatoes, chopped
  • 4 cups Vegetable broth
  • 2 tablespoons Tomato paste
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Heavy cream (optional, for extra creaminess)
  • 0 Croutons or additional basil for garnish

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

Step 4

Add the sliced carrots to the pot and cook for 5 minutes, stirring occasionally, until slightly softened.

Step 5

Add the chopped tomatoes, vegetable broth, and tomato paste to the pot. Stir well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the carrots are tender.

Step 7

Remove the pot from the heat and let it cool slightly. Stir in the fresh basil leaves.

Step 8

Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth, then return to the pot.

Step 9

Season the soup with salt and black pepper, adjusting to taste.

Step 10

If desired, stir in the heavy cream for extra creaminess and gently warm the soup over low heat (do not boil).

Step 11

Serve the bisque hot, garnished with croutons or additional basil leaves.
