Ingredients

  • 180 grams All-purpose flour
  • 100 grams Unsalted butter
  • 0.5 teaspoons Salt
  • 3 tablespoons Cold water
  • 200 grams Plain Greek yogurt
  • 1 large Egg
  • 50 grams Parmesan cheese (grated)
  • 250 grams Cherry tomatoes
  • 10 grams Fresh basil leaves
  • 1 tablespoons Olive oil
  • 0.25 teaspoons Black pepper
  • 0 Optional: balsamic glaze

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

To prepare the crust, mix the all-purpose flour and salt in a large bowl. Add cubed cold butter and use your fingers or a pastry cutter to incorporate it into the flour until the mixture resembles coarse crumbs.

Step 3

Add cold water one tablespoon at a time, mixing gently until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 15 minutes.

Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the tart pan, trimming any excess overhang. Poke the bottom of the crust with a fork to prevent puffing.
