Ingredients

  • 56 oz Canned diced tomatoes
  • 3 cups Chicken or vegetable broth
  • 1 medium Carrot, finely chopped
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 cup Fresh basil leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Sugar
  • 1 cup Heavy cream
  • 1 tbsp Olive oil

Directions

Step 1

Prepare your vegetables: chop the carrot and onion finely, and mince the garlic cloves.

Step 2

In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and carrot until softened, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

Step 3

Transfer the sautéed vegetables to your crockpot.

Step 4

Add the canned diced tomatoes (including their juice), chicken or vegetable broth, basil leaves, salt, black pepper, and sugar to the crockpot. Stir to combine.

Step 5

Cover the crockpot and set it to cook on low heat for 4 hours, or on high heat for 2 hours.

Step 6

Once the cooking time is complete, use an immersion blender to puree the soup directly in the crockpot until smooth. Alternatively, you can transfer the soup in batches to a blender and puree, then return it to the crockpot.

Step 7

Stir in the heavy cream and adjust seasoning with additional salt and pepper as needed.

Step 8

Allow the soup to warm for an additional 10-15 minutes on low heat, stirring occasionally.

Step 9

Serve hot, garnished with additional fresh basil leaves if desired. Enjoy with crusty bread or your favorite grilled cheese.
