Ingredients

  • 1 sheet Puff pastry sheet
  • 3 medium Tomatoes (heirloom or vine-ripened)
  • 4 tablespoons Olive tapenade
  • 0.25 cup Goat cheese (crumbled)
  • 6 leaves Fresh basil leaves
  • 1 large Egg
  • 1 tablespoon Water
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Roll out the puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet.

Step 3

Using a sharp knife, lightly score a 1-inch border around the edges of the pastry, being careful not to cut all the way through. This will act as the crust.

Spread the olive tapenade evenly over the inner rectangle of the puff pastry, avoiding the border.
