Start by peeling the tomatoes. Bring a large pot of water to a boil and prepare an ice bath. Score a small 'X' on the bottom of each tomato, gently lower them into the boiling water for 30 seconds, then immediately transfer them to the ice bath. Peel off the skins and discard.
