Ingredients

  • 150 g chorizo sausage
  • 4 medium ripe tomatoes
  • 1 small red onion
  • 2 cloves garlic cloves
  • 3 tablespoons, chopped fresh cilantro
  • 1 whole lime
  • 1 small jalapeño
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a non-stick skillet over medium heat. Remove the casing from the chorizo sausage and crumble the meat into the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy. Remove from heat and drain excess grease if necessary. Set aside to cool.

While the chorizo cools, dice the tomatoes into small chunks and transfer them to a medium mixing bowl.
