Ingredients

  • 1 cup Couscous
  • 1 cup Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1.5 cups Cherry tomatoes
  • 0.5 cup Fresh basil leaves
  • 1 small Shallot
  • 2 tablespoons Lemon juice
  • 0.25 teaspoon Black pepper
  • 0.5 cup Feta cheese
  • 2 tablespoons Pine nuts

Directions

Step 1

In a medium saucepan, bring 1 cup of water to a boil.

Step 2

Stir in 1 cup of couscous and 0.5 teaspoon of salt. Remove the saucepan from heat, cover with a lid, and let it sit for 5 minutes.

Fluff the couscous with a fork and drizzle 1 tablespoon of olive oil over it. Set aside to cool completely.

While the couscous cools, halve 1.5 cups of cherry tomatoes, finely chop 0.5 cup of fresh basil leaves, and mince 1 small shallot.
