Ingredients

  • 500 grams Ripe tomatoes
  • 1 tablespoon Mustard seeds
  • 1 teaspoon Fenugreek seeds

  • 1.5 tablespoons Red chili powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Tamarind pulp
  • 10 leaves Curry leaves
  • 6 cloves Garlic cloves
  • 1 inch Ginger
  • 3 tablespoons Mustard oil

Directions

Step 1

Wash the tomatoes thoroughly and chop them into small pieces.

Step 2

Peel the garlic cloves and grate the ginger.

Step 3

Heat the mustard oil in a large pan or wok over medium heat until it reaches its smoking point. This helps reduce its pungency.

Add the mustard seeds to the hot oil and let them crackle.

Lower the heat and add fenugreek seeds, curry leaves, grated ginger, and crushed garlic. Sauté for about 1-2 minutes until fragrant.

Add the chopped tomatoes to the pan and stir well to combine.
