Ingredients

  • 8 medium Tomatillos
  • 1 whole Jalapeño pepper
  • 2 whole Garlic cloves
  • 1 small White onion
  • 0.5 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 0.25 cup Water

Directions

Step 1

Remove the husks from the tomatillos and rinse them thoroughly under cold water to remove any sticky residue.

Step 2

Cut the tomatillos in half and peel the garlic cloves.

Step 3

Heat a large skillet over medium-high heat. Add the vegetable oil.

Step 4

Place the halved tomatillos, jalapeño, garlic cloves, and onion (peeled and cut into quarters) into the skillet. Cook for 5-7 minutes, turning occasionally, until the tomatillos are softened and slightly charred.

Step 5

Transfer the contents of the skillet to a blender. Allow to cool for a minute before blending.

Step 6

Add the cilantro, lime juice, salt, and water to the blender. Blend on high until smooth. Adjust salt to taste if necessary.

Step 7

Serve immediately as a sauce for tacos or enchiladas, or refrigerate in an airtight container for up to 5 days.
