Brighten up your dishes with this zesty and homemade tomatillo sauce, the perfect companion for tacos, enchiladas, and more! Made with charred tomatillos, a hint of heat from jalapeño, aromatic garlic and onion, and a burst of freshness from lime juice and cilantro, this easy sauce strikes the ideal balance between tangy and savory. The ingredients are roasted in a skillet to deepen their flavors, then blended to a smooth, vibrant green perfection. Ready in just 25 minutes, this quick and versatile tomatillo salsa is a must-try for fans of bold and authentic Mexican flavors.
Remove the husks from the tomatillos and rinse them thoroughly under cold water to remove any sticky residue.
Cut the tomatillos in half and peel the garlic cloves.
Heat a large skillet over medium-high heat. Add the vegetable oil.
Place the halved tomatillos, jalapeño, garlic cloves, and onion (peeled and cut into quarters) into the skillet. Cook for 5-7 minutes, turning occasionally, until the tomatillos are softened and slightly charred.
Transfer the contents of the skillet to a blender. Allow to cool for a minute before blending.
Add the cilantro, lime juice, salt, and water to the blender. Blend on high until smooth. Adjust salt to taste if necessary.
Serve immediately as a sauce for tacos or enchiladas, or refrigerate in an airtight container for up to 5 days.
