Ingredients

  • 6 whole Tomatillos
  • 1 large Avocado
  • 1 whole Jalapeño pepper
  • 2 whole Garlic cloves
  • 0.5 cup Cilantro
  • 1 whole Lime
  • 0.25 cup White onion
  • 0.75 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

Peel and rinse the tomatillos to remove their sticky residue.

Step 2

Preheat a skillet or grill pan over medium-high heat. Once hot, add the whole tomatillos, jalapeño, and garlic cloves (in their skins). Roast them, turning occasionally, until charred and softened, about 8-10 minutes.

Step 3

Remove the garlic cloves from their skins and discard the skins. Set the roasted tomatillos, jalapeño, and garlic aside to cool slightly.

Step 4

Slice the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

Roughly chop the roasted jalapeño (remove the seeds if you prefer less heat) and add it to the blender along with the roasted tomatillos and garlic.
