Ingredients

  • 300 g Chicken or shrimp (peeled and deveined)
  • 4 cups Chicken stock
  • 2 pieces Lemongrass stalks (smashed and cut into 2-inch pieces)
  • 4 slices Galangal (sliced)
  • 5 leaves Kaffir lime leaves (torn into pieces)
  • 3 pieces Thai bird's eye chilies (smashed)
  • 200 g White mushrooms (sliced)
  • 2 pieces Tomatoes (quartered)
  • 2 tbsp Fish sauce
  • 3 tbsp Lime juice
  • 1 tbsp Thai chili paste (Nam Prik Pao)
  • 2 tbsp Fresh cilantro (chopped)
  • 1 tsp Sugar

Directions

Step 1

In a medium pot, bring the chicken stock to a boil over medium-high heat.

Step 2

Add the lemongrass, galangal, kaffir lime leaves, and Thai bird's eye chilies to the stock and let it simmer for 5 minutes to infuse the broth with aromatic flavors.

Step 3

Lower the heat to medium and add the mushrooms and tomatoes. Cook for another 5 minutes until the mushrooms are tender.

Step 4

If using chicken, add it now and let it cook for 7-8 minutes until fully cooked through. If using shrimp, add it after the mushrooms and cook for 2-3 minutes until they turn pink and opaque.

Step 5

Stir in the fish sauce, lime juice, Thai chili paste, and sugar. Taste and adjust seasoning if needed to balance the flavors of sour, salty, spicy, and sweet.

Step 6

Remove the pot from heat and garnish with fresh cilantro before serving.
