  • 2 whole Lemongrass stalks
  • 4 whole Kaffir lime leaves

  • 3 whole Thai bird's eye chilies
  • 3 whole Shallots
  • 250 grams Fresh shrimp, peeled and deveined
  • 150 grams Oyster mushrooms
  • 8 whole Cherry tomatoes
  • 3 tablespoons Fish sauce
  • 3 tablespoons Lime juice
  • 2 tablespoons Cilantro leaves
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt

Directions

Step 1

Begin by cleaning and preparing your ingredients. Slice the lemongrass into 2-inch lengths and bruise them using the back of a knife.

Tear the kaffir lime leaves in half to release their aroma.

Step 3

Thinly slice the galangal and shallots.

Step 4

Remove the stems from the chilies. For less heat, deseed the chilies.

In a large pot, bring the 4 cups of water to a boil.
