Ingredients

  • 3 blocks (14 ounces each) Extra-firm tofu
  • 3 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried sage
  • 1 teaspoon Dried thyme
  • 3 tablespoons Soy sauce
  • 2 tablespoons Olive oil
  • 3 cups (prepared according to package instructions) Vegan stuffing mix
  • 1 cup Vegetable broth
  • 1 tablespoon Maple syrup
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cornstarch
  • 0.5 teaspoon Black pepper

Directions

Step 1

Press the tofu: Place the blocks of tofu on a clean kitchen towel or paper towel. Cover with more towels and place a heavy object on top (such as a cast iron skillet) to press out excess water. Let it press for 15-20 minutes.

Step 2

Blend the tofu: After pressing, crumble the tofu into a food processor. Add the nutritional yeast, garlic powder, onion powder, dried sage, dried thyme, soy sauce, olive oil, and black pepper. Blend until smooth and paste-like.

Step 3

Prepare the tofu mold: Line a medium-sized mixing bowl with plastic wrap, leaving enough overhang to cover the top later. Scoop about 2/3 of the tofu mixture into the bowl and press it evenly against the bottom and sides, leaving a cavity in the center for the stuffing.

Step 4

Add the stuffing: Spoon the prepared vegan stuffing into the cavity of the molded tofu. Pack it down gently but firmly.

Step 5

Seal the tofu: Spread the remaining tofu mixture over the stuffing, sealing the edges to enclose the stuffing completely. Press everything firmly to ensure it holds its shape.

Step 6

Transfer to a baking dish: Carefully invert the bowl onto a parchment-lined baking sheet or roasting pan. Peel off the plastic wrap to reveal your tofu 'turkey.'

Step 7

Prepare the glaze: In a small bowl, whisk together the vegetable broth, maple syrup, smoked paprika, and cornstarch until smooth.

Step 8

Glaze and bake: Brush the tofu turkey generously with the glaze. Cover it loosely with aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.

Step 9

Uncover and finish baking: Remove the foil and brush the tofurkey with more glaze. Bake uncovered for an additional 30 minutes, or until the surface is golden brown and slightly crispy.

Step 10

Rest and serve: Let the tofurkey rest for 10 minutes before slicing. Serve with your favorite vegan gravy and sides!
