Ingredients

  • 400 grams Firm tofu
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 400 grams Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 2 tablespoons, chopped Fresh parsley
  • 100 milliliters Water

Directions

Step 1

Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top, like a cast iron skillet. Let it sit for at least 15 minutes.

Step 2

After the tofu has been pressed, cut it into bite-sized cubes.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the tofu cubes and cook them until they are golden brown on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 5

Add the minced garlic to the skillet and sauté for another minute until fragrant.

Step 6

Stir in the canned diced tomatoes, tomato paste, oregano, basil, salt, black pepper, and sugar. Mix well to combine.

Step 7

Add 100 milliliters of water to the skillet and stir. Bring the mixture to a gentle simmer.

Step 8

Return the browned tofu cubes to the skillet, ensuring they are submerged in the tomato sauce.

Step 9

Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes, stirring occasionally to prevent sticking.

Step 10

Check the seasoning, adjust salt and pepper if needed. Sprinkle the chopped fresh parsley over the tofu and tomato sauce before serving.

Step 11

Serve the tofu with tomato sauce hot, alongside rice, pasta, or a fresh crusty bread.
