Ingredients

  • 14 ounces Extra-firm tofu
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Green bell pepper, diced
  • 1 cup Ketchup
  • 2 tablespoons Tomato paste
  • 2 tablespoons Soy sauce
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Water
  • 4 Hamburger buns
  • 0 Optional toppings: sliced pickles, coleslaw, or vegan cheese

Directions

Step 1

Drain the tofu and pat it dry with a clean kitchen towel or paper towels. Use your hands or a fork to crumble the tofu into small, ground-meat-like pieces.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes, until softened.

Step 3

Stir in the minced garlic and diced green bell pepper. Cook for another 2-3 minutes, until fragrant and the peppers have softened slightly.

Step 4

Add the crumbled tofu to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tofu starts to brown and crisp up slightly.

Step 5

In a small bowl, whisk together the ketchup, tomato paste, soy sauce, apple cider vinegar, Dijon mustard, smoked paprika, chili powder, ground cumin, salt, and black pepper. Add the 1/4 cup of water to thin the sauce slightly.

Step 6

Pour the sauce over the tofu mixture in the skillet. Stir well to combine, making sure the tofu is evenly coated with the sauce.

Step 7

Reduce the heat to low and let the mixture simmer for 5 minutes, stirring occasionally, until the sauce thickens and everything is heated through.

Step 8

Toast the hamburger buns if desired. Spoon the tofu sloppy joe mixture onto the bottom half of each bun.

Step 9

Add any optional toppings such as sliced pickles, coleslaw, or vegan cheese. Place the top bun over the filling and serve immediately.
