Ingredients

  • 12 ounces Silken tofu
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 cup Unsweetened non-dairy milk (e.g., almond or soy milk)
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 teaspoon Italian seasoning
  • 16 ounces Pasta of your choice, cooked and drained
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Drain the silken tofu and pat it dry gently with a paper towel to remove excess moisture.

Step 2

Peel and finely mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 4

Transfer the garlic and olive oil to a blender or food processor.

Step 5

Add the silken tofu, nutritional yeast, lemon juice, non-dairy milk, salt, pepper, and Italian seasoning to the blender or food processor.

Step 6

Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if necessary.

Step 7

Return the creamy tofu sauce to the skillet and warm it over low heat, stirring occasionally. Be careful not to let it boil.

Step 8

Once heated, add the cooked and drained pasta to the skillet and toss until the pasta is evenly coated with the sauce.

Step 9

Serve immediately, garnished with fresh parsley if desired.
