Ingredients

  • 300 grams soft tofu (silken tofu)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic clove (for Garlic Herb Sauce)
  • 2 tablespoons fresh parsley, chopped (for Garlic Herb Sauce)
  • 1 teaspoon dried oregano (for Garlic Herb Sauce)
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped (for Spicy Chipotle Sauce)
  • 1 teaspoon smoked paprika (for Spicy Chipotle Sauce)
  • 1 teaspoon maple syrup (for Spicy Chipotle Sauce)
  • 2 tablespoons soy sauce (for Asian Sesame Ginger Sauce)
  • 1 teaspoon toasted sesame oil (for Asian Sesame Ginger Sauce)
  • 1 teaspoon fresh ginger, minced (for Asian Sesame Ginger Sauce)
  • 1 tablespoon rice vinegar (for Asian Sesame Ginger Sauce)

Directions

Step 1

1. Drain the soft tofu by gently pressing it with a paper towel or kitchen towel to remove excess liquid, but do not press it too hard to retain its creamy texture.

Step 2

2. In a blender or food processor, add the soft tofu, olive oil, and lemon juice. Blend together until the mixture becomes smooth and creamy.

Step 3

3. Divide the blended tofu base evenly into three small bowls if you are making all three variations. Alternatively, you can stick to one variation by adding the specific ingredients directly to the whole batch.

Step 4

4. For Garlic Herb Sauce: Add the minced garlic, chopped parsley, and dried oregano to one portion of the tofu base. Blend until smooth, then taste and adjust seasoning with salt and pepper as needed.

Step 5

5. For Spicy Chipotle Sauce: Add the finely chopped chipotle peppers, smoked paprika, and maple syrup to another portion of the tofu base. Blend until smooth, then adjust seasoning according to your preference.

Step 6

6. For Asian Sesame Ginger Sauce: Add the soy sauce, toasted sesame oil, minced ginger, and rice vinegar to the final portion of the tofu base. Blend until smooth, and adjust seasoning if necessary.

Step 7

7. Serve the sauces immediately as dips, spread, or marinades. Alternatively, transfer to airtight containers and refrigerate for up to 3 days for later use.
