Press the tofu to remove excess water by wrapping it in a clean kitchen towel and placing a heavy object on top for 10 minutes. Once pressed, cut the tofu into 1-inch cubes.
Wash and chop the bok choy into bite-sized pieces. Separate the leafy greens from the thicker stems as they require different cooking times.
Mince the garlic and ginger, and slice the green onions thinly. Set these aromatics aside.
