Ingredients

  • 250 grams All-purpose flour
  • 200 grams Unsalted butter (cold)
  • 100 grams Granulated sugar
  • 400 grams Sweetened condensed milk
  • 3 tablespoons Golden syrup
  • 50 grams Light brown sugar
  • 100 grams Unsalted butter (for toffee)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Flaked sea salt (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9 inch (23x23cm) square baking tin with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour and granulated sugar. Add the cold unsalted butter, cut into cubes, and rub together with your fingers until the mixture resembles fine breadcrumbs.

Step 3

Press the mixture evenly into the prepared baking tin. Use the back of a spoon or the bottom of a glass to compact it firmly. Bake in the preheated oven for 15–20 minutes, or until lightly golden. Remove from the oven and let it cool completely.

While the base is cooling, make the toffee layer. In a medium saucepan, combine the sweetened condensed milk, golden syrup, light brown sugar, and unsalted butter (for toffee). Heat over medium-low heat, stirring constantly to prevent burning, until the mixture thickens and turns a deep golden caramel color. This will take about 8–10 minutes.

Remove the saucepan from the heat and stir in the vanilla extract. If using, sprinkle the flaked sea salt into the toffee mixture.
