Ingredients

  • 1.5 cups All-purpose flour
  • 2 cups Old-fashioned rolled oats
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 0.5 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Toffee bits

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.

Step 6

Fold in the toffee bits until evenly distributed throughout the dough.

Step 7

Scoop about 1 ½ tablespoons of dough (or use a cookie scoop) and drop onto the prepared baking sheets, spacing the cookies about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look just set.

Step 9

Remove the baking sheets from the oven and allow the cookies to cool on the pans for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to one week. Enjoy!
