Ingredients

  • 1 medium Peach
  • 2 tablespoons Butter
  • 1 tablespoon Honey
  • 2 ounces Goat cheese
  • 4 slices Bread
  • 1 handful Arugula (optional)

Directions

Step 1

Slice the peach into thin wedges.

Step 2

Heat 1 tablespoon of butter in a skillet over medium heat. Add the peach slices and cook for 2–3 minutes on each side until they are caramelized and slightly softened. Drizzle with honey and stir gently. Remove from heat and set aside.

Spread the goat cheese evenly on one side of each bread slice.

If using arugula, layer a few leaves on top of the goat cheese on two of the bread slices.
