Ingredients

  • 1 cup millet
  • 2 cups water
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0 optional garnish: chopped parsley or toasted nuts

Directions

Step 1

Rinse the millet under cold water using a fine mesh sieve to remove any dust or debris. Allow it to drain well.

Step 2

In a medium-sized saucepan, heat 1 tablespoon of olive oil over medium heat.

Step 3

Add the drained millet to the saucepan and stir frequently for 3-5 minutes, or until the millet becomes golden and aromatic. Be careful not to burn it.

Step 4

Add 2 cups of water to the saucepan and stir in 1/2 teaspoon of salt. Increase the heat to high and bring the mixture to a boil.

Step 5

Once boiling, reduce the heat to low, cover the saucepan with a lid, and let the millet simmer for 15-20 minutes, or until all the water has been absorbed and the millet is tender.

Step 6

Remove the saucepan from the heat and let it sit, covered, for 5 additional minutes to allow the millet to steam and fluff up.

Step 7

Fluff the millet with a fork before serving. Garnish with chopped parsley or toasted nuts if desired.

Step 8

Serve warm as a side dish, or use it as a base for bowls, salads, or other recipes. Enjoy!
