Ingredients

  • 2 Large eggs
  • 2 slices Sourdough bread
  • 2 tablespoons Butter
  • 2 slices Sharp cheddar cheese
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Sriracha or hot sauce
  • 1 handful Baby spinach or arugula
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 teaspoon Cooking oil

Directions

Step 1

Heat a non-stick skillet over medium heat and add 1 teaspoon of cooking oil.

Step 2

Crack the eggs into the skillet and season with a pinch of salt and black pepper. Cook the eggs until the whites set and the yolks remain slightly runny, or to your preferred doneness. Carefully remove the eggs from the skillet and set them aside on a plate.

Step 3

Spread 1 tablespoon of butter on one side of each sourdough bread slice.

Step 4

Place one slice of the bread, buttered side down, onto the skillet over medium heat. Add one slice of cheddar cheese on top.

Step 5

Place the cooked eggs on the cheese, then add a handful of baby spinach or arugula on top.

Step 6

Add the second slice of cheese and finish with the other slice of bread, buttered side up.

Step 7

Cook the sandwich until the bottom slice of bread is golden brown and crispy, about 3-4 minutes. Carefully flip the sandwich using a spatula and cook the other side until golden brown and the cheese is melted, another 3-4 minutes.

In a small bowl, mix the mayonnaise and sriracha or hot sauce to make a spicy mayo.

Once the sandwich is done, remove it from the skillet and gently open it. Spread the spicy mayo on the inside of the bread slices.
