Ingredients

  • 2 pounds boneless lamb shoulder, cut into 1.5-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, diced
  • 3 large carrots, peeled and cut into 1-inch chunks
  • 4 russet potatoes, peeled and cut into 2-inch chunks
  • 2 celery stalks, cut into 1-inch slices
  • 3 garlic cloves, minced
  • 4 cups beef or lamb stock
  • 1 cup Guinness beer (optional)
  • 4 fresh thyme sprigs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the lamb cubes with salt and pepper. Lightly dredge the lamb cubes in flour, shaking off any excess.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. Brown the lamb in batches to avoid overcrowding the pot, about 4-5 minutes per batch. Remove the lamb and set it aside.

Step 3

Reduce the heat to medium and add the diced onion to the pot. Sauté for 3-4 minutes, or until the onion is softened.

Step 4

Add the minced garlic and cook for another 1 minute until fragrant.

Step 5

Return the browned lamb to the pot and pour in the beef or lamb stock. If using Guinness beer, add it at this stage as well. Stir to combine.

Step 6

Add the carrots, potatoes, celery, and thyme sprigs to the pot. Bring the mixture to a gentle boil.

Step 7

Lower the heat to a simmer, cover the pot with a lid, and let the stew cook for 1.5 to 2 hours, or until the lamb is tender and the vegetables are fully cooked.

Step 8

Remove the thyme sprigs and taste the stew, adjusting seasoning with additional salt or pepper if needed.

Step 9

Ladle the stew into bowls and garnish with fresh parsley. Serve warm with crusty bread for dipping, if desired.
