Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a medium mixing bowl, crumble the feta cheese using a fork.
Add the cream cheese, grated kefalotyri or Parmesan cheese, and the egg to the feta cheese. Mix until well combined.
If desired, stir in the chopped parsley and season with black pepper. Set the filling aside.
Lay a sheet of phyllo dough on a clean work surface and brush it lightly with melted butter mixed with olive oil. Place another sheet on top and brush again.
Cut the layered phyllo dough into 3 long strips (approximately 7-8 cm wide).
Place 1 tablespoon of cheese filling at the bottom of one strip. Fold one corner of the strip diagonally over the filling to form a triangle.
Continue folding the triangle upward, maintaining the triangular shape, until the entire strip is folded. Repeat with the other strips and remaining filling.
Place the prepared tiropites on the lined baking tray and brush the tops with melted butter.
Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving. Serve warm or at room temperature.
