Ingredients

  • 12 pieces Ladyfingers
  • 120 ml Strong brewed coffee
  • 225 g Mascarpone cheese
  • 225 g Cream cheese, softened
  • 100 g Granulated sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 tsp Espresso powder
  • 120 ml Heavy cream
  • 50 g Powdered sugar
  • 2 tsp Unsweetened cocoa powder

Directions

Step 1

Preheat your oven to 160°C (325°F) and line a standard 12-cup muffin tin with cupcake liners.

Step 2

Brew 120ml of strong coffee and let it cool to room temperature.

Step 3

Break each ladyfinger in half and quickly dip them into the cooled coffee. Place two halves at the bottom of each cupcake liner to create the base.

In a large mixing bowl, beat together the mascarpone cheese, cream cheese, and granulated sugar until smooth and creamy.

Add the eggs, one at a time, and mix thoroughly after each addition.
