Ingredients

  • 250 g All-purpose flour
  • 50 g Granulated sugar
  • 7 g Instant yeast
  • 0.5 tsp Salt
  • 3 large Eggs
  • 100 ml Warm milk
  • 80 g Unsalted butter (softened)
  • 250 ml Espresso
  • 250 ml Water
  • 150 g Granulated sugar (for syrup)
  • 30 ml Dark rum
  • 250 g Mascarpone cheese
  • 200 ml Heavy cream
  • 50 g Powdered sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Cocoa powder

Directions

Step 1

In a large mixing bowl, combine the flour, granulated sugar, instant yeast, and salt. Mix well to distribute the dry ingredients evenly.

Step 2

Add the eggs and warm milk to the flour mixture. Using a stand mixer with a dough hook or mixing by hand, knead until a smooth dough forms.

Step 3

Gradually add the softened butter, kneading continuously until fully incorporated and the dough is glossy and elastic.

Cover the dough with a damp cloth and let it rise in a warm place for 1 hour, or until doubled in size.

Preheat your oven to 180°C (350°F) and grease 6 small baba molds or a muffin tin.
