  • 4 pounds beef brisket
  • 2 teaspoons kosher salt

  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 3 carrots, chopped into large pieces
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 cup beef stock
  • 1 cup whiskey
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 3 fresh thyme sprigs

Step 1

Preheat your oven to 325°F (165°C).

Pat the brisket dry with paper towels and season it generously on both sides with kosher salt, black pepper, paprika, garlic powder, and onion powder.

In a large Dutch oven or heavy oven-safe pot, heat the olive oil over medium-high heat. Sear the brisket on both sides until it develops a golden brown crust, about 4-5 minutes per side. Remove the brisket and set it aside.
