  • 4 sheets aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C) or prepare hot coals if cooking outdoors.

Wash the red potatoes and dice them into small, bite-sized cubes. Peel and slice the carrots into thin rounds. Chop the yellow onion into medium chunks.

In a large mixing bowl, combine the diced potatoes, carrots, chopped onion, and frozen peas. Drizzle with olive oil and add garlic powder, onion powder, thyme, salt, and black pepper. Toss well to coat evenly.
