Line a large baking sheet with parchment paper or lightly grease it with olive oil.
Peel the sweet potatoes and cut them into 1/2-inch cubes.
Place the sweet potato cubes onto the baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Toss to coat evenly.
