Ingredients

  • 4 pieces Tilapia fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Garlic cloves, minced
  • 1 cup Jarred pimientos, drained and chopped
  • 0.75 cup Heavy cream
  • 0.5 cup Chicken broth
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Season the tilapia fillets with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil over medium heat. Once hot, add the tilapia fillets and cook for 3-4 minutes per side or until golden brown and cooked through. Remove the fillets from the skillet and set aside on a plate.

Step 3

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Stir in the chopped pimientos and cook for another 2 minutes, stirring occasionally.

Step 5

Reduce the heat to low, then pour in the heavy cream and chicken broth. Stir well, allowing the mixture to come to a simmer.

Step 6

Add the grated Parmesan cheese and continue to stir until the cheese is fully melted and the sauce is smooth, about 2-3 minutes.

Step 7

Return the cooked tilapia fillets to the skillet, spooning the pimiento sauce over the fish. Let the fillets warm through in the sauce for 2-3 minutes.

Step 8

Sprinkle the dish with fresh parsley and serve hot with lemon wedges on the side for a burst of brightness.
