Ingredients

  • 4 pieces Tilapia fillets
  • 6 cups Fresh spinach
  • 3 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 4 ounces Cream cheese
  • 0.25 cup Milk
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Panko breadcrumbs
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Step 3

Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

Step 4

In a small saucepan, combine cream cheese and milk. Heat over low heat, whisking constantly, until the mixture is smooth and creamy.

Step 5

Transfer the cream cheese mixture to the skillet with the spinach and stir to combine evenly. Spread this spinach mixture evenly at the bottom of the prepared baking dish.

Step 6

Arrange the tilapia fillets on top of the spinach mixture. Drizzle the fillets with the remaining 1 tablespoon of olive oil and 2 tablespoons of lemon juice. Season with salt and black pepper.

Step 7

In a small bowl, combine grated Parmesan and panko breadcrumbs. Mix well.

Step 8

Sprinkle the Parmesan-panko mixture evenly over the tilapia fillets to form a topping.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the fish is opaque and flakes easily with a fork, and the topping is golden brown.

Step 10

Remove from the oven and let it rest for 2-3 minutes. Serve warm as is or alongside rice, quinoa, or a fresh salad.
