Ingredients

  • 1 cup Fresh thyme (leaves only)
  • 1 cup Fresh parsley (leaves and tender stems)
  • 0.25 cup Pine nuts
  • 0.5 cup Grated Parmesan cheese
  • 2 whole Garlic cloves
  • 1 tablespoon Lemon juice
  • 0.5 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Rinse the thyme and parsley leaves thoroughly under cold water and pat them dry using a clean kitchen towel or paper towel.

Step 2

Carefully remove the thyme leaves from the stems until you have 1 cup of leaves, and measure out 1 cup of parsley leaves and tender stems.

Step 3

Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until they are golden and fragrant. Set aside to cool.

Step 4

In a food processor, combine the thyme leaves, parsley, toasted pine nuts, Parmesan cheese, garlic cloves, and lemon juice. Pulse several times to break everything down into a coarse mixture.

Step 5

With the food processor running, slowly drizzle in the olive oil until the pesto becomes smooth and creamy. Scrape down the sides as needed.

Step 6

Season with salt and ground black pepper, and pulse a few more times to incorporate the seasoning evenly.

Step 7

Taste the pesto and adjust the seasoning with more salt, pepper, or lemon juice as needed.

Step 8

Transfer the finished thyme pesto to a clean jar or airtight container. Store in the refrigerator for up to one week or freeze for longer storage.
