Ingredients

  • 240 ml Water
  • 115 grams Unsalted butter
  • 1 teaspoon Salt
  • 125 grams All-purpose flour
  • 4 Eggs
  • 100 grams Gruyère cheese, grated
  • 1 tablespoon Fresh thyme leaves, chopped
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Preheat your oven to 220°C (425°F). Line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine the water, unsalted butter, and salt. Heat over medium heat until the butter is melted and the mixture begins to boil.

Reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the dough comes together in a ball and pulls away from the sides of the pan, about 1-2 minutes.

Remove the saucepan from the heat and let the dough cool for 2-3 minutes. This will prevent the eggs from cooking when added.
