Ingredients

  • 2 cups Brown rice
  • 100 grams Spinach
  • 100 grams Kale
  • 100 grams Mustard greens
  • 30 grams Mint leaves
  • 30 grams Coriander
  • 30 grams Thai basil
  • 2 tablespoons Green tea leaves
  • 100 grams Roasted peanuts
  • 200 grams Tofu
  • 3 cloves Garlic
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 4 cups Water

Directions

Step 1

Cook the brown rice according to the package instructions. Set aside.

Step 2

Wash and chop the spinach, kale, and mustard greens into bite-sized pieces.

Step 3

Dice the tofu into small cubes.

Step 4

Peel and chop the garlic finely.

Step 5

Heat 2 tablespoons of vegetable oil in a frying pan over medium heat. Add the diced tofu and fry until golden and crispy. Remove from pan and set aside.

In the same pan, add another tablespoon of oil and the chopped garlic. Saute until fragrant.

Add the spinach, kale, and mustard greens to the pan. Stir-fry for about 5 minutes until the greens are wilted. Season with salt and set aside.

For the thunder tea soup, blend the Thai basil, mint leaves, coriander, green tea leaves, peanuts, and 4 cups of water in a blender until smooth.

Pour the blended mixture into a pot and bring it to a boil. Simmer on low heat for about 10 minutes. Adjust salt to taste if necessary.

To assemble, place a portion of brown rice in a bowl. Arrange the cooked greens, fried tofu, and remaining roasted peanuts around the rice.
