  • 2 lbs beef chuck, cubed

  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 piece bay leaf
  • 0 optional toppings: shredded cheese, sour cream, chopped green onions

Directions

Step 1

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the cubed beef chuck in batches, searing each piece until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, reduce the heat to medium and sauté the diced onion until softened, about 5 minutes. Add the minced garlic and cook for an additional minute. Stir in the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper, and tomato paste. Cook for 1-2 minutes to toast the spices.
