Ingredients

  • 1 pound beef sirloin steak
  • 1 tablespoon black peppercorns, crushed
  • 1 tablespoon green peppercorns, crushed
  • 1 teaspoon red pepper flakes
  • 3 pieces garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup beef broth
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper

Directions

Step 1

Pat the sirloin steak dry with paper towels and season both sides with salt and freshly ground black pepper.

Step 2

Spread the crushed black and green peppercorns evenly on a plate. Press both sides of the steak into the peppercorn mixture to coat it evenly.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the steak to the skillet.

Step 4

Cook the steak for 4-5 minutes on each side for medium-rare, or adjust the cooking time based on your preferred doneness. Remove the steak from the skillet and loosely cover it with foil to rest.

Step 5

Reduce the skillet heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 6

Pour the beef broth into the skillet and scrape the bottom with a wooden spoon to deglaze, incorporating the browned bits into the sauce.

Step 7

Stir in the heavy cream and red pepper flakes. Bring the mixture to a simmer and cook for 2-3 minutes until slightly thickened.

Step 8

Slice the rested steak against the grain into thin strips and return it to the skillet to coat with the pepper sauce.

Step 9

Garnish with freshly chopped parsley before serving.

Step 10

Serve hot with your favorite side dishes like mashed potatoes or steamed vegetables.
