  • 1 cup Snap peas
  • 1 cup Snow peas

  • 4 cups Arugula

  • 3 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic (minced)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the skillet, let rest for 5 minutes, then slice into thin strips.
