Ingredients

  • 1 cup couscous
  • 1.25 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 1 medium, thinly sliced red onion
  • 4 stalks, finely chopped green onions
  • 2 minced garlic cloves
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the diced yellow onion and cook for 3-4 minutes until softened and lightly golden.

Step 2

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 3

Add the vegetable broth and bring to a boil. Once boiling, stir in the couscous, cover the pan, and remove from heat. Let the couscous steam for 5 minutes.

Step 4

While the couscous steams, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the red onion slices and sauté for 5-6 minutes, stirring occasionally, until caramelized.

Step 5

Add the chopped green onions to the skillet and cook for 2 minutes, just until softened slightly.

Step 6

Fluff the couscous with a fork and add it to the skillet with the red and green onions. Stir to combine.

Step 7

Mix in the chopped parsley, lemon zest, lemon juice, salt, and black pepper. Taste and adjust seasoning as needed.

Step 8

Serve warm or at room temperature, garnished with additional parsley if desired.
