Ingredients

  • 200 grams Cremini mushrooms
  • 150 grams Shiitake mushrooms
  • 150 grams Oyster mushrooms
  • 3 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 100 grams Mixed salad greens
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 30 grams Shaved Parmesan cheese (optional)

Directions

Step 1

Clean all the mushrooms with a damp paper towel and slice them into thin, even slices.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the cremini, shiitake, and oyster mushrooms to the skillet and sauté for 5-7 minutes, stirring occasionally, until the mushrooms are tender and slightly golden.

Step 4

Add the minced garlic to the mushrooms and cook for another minute, stirring frequently to prevent burning.

Step 5

Season the mushroom mixture with salt and black pepper. Remove the skillet from heat and let the mushrooms cool slightly.

Step 6

In a large serving bowl, combine the mixed salad greens and the partially cooled mushroom mixture.

Step 7

Drizzle the remaining tablespoon of olive oil and the lemon juice over the salad. Toss gently to combine.

Step 8

Garnish the salad with chopped fresh parsley and, if desired, shaved Parmesan cheese.

Step 9

Serve immediately, either as a side dish or a light main course.
