Ingredients

  • 400 g spaghetti
  • 4 cloves fresh garlic cloves, minced
  • 8 cloves roasted garlic (about 1 head)
  • 3 tbsp garlic-infused olive oil
  • 2 tbsp unsalted butter
  • 50 g Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp red chili flakes
  • 1 to taste salt
  • 1 to taste freshly cracked black pepper
  • 120 ml pasta water

Directions

Step 1

Roast a head of garlic: Preheat the oven to 200°C (400°F). Cut the top off a garlic bulb to expose the cloves, drizzle with 1 tsp olive oil, wrap in foil, and roast for 30–40 minutes. Once soft, cool and squeeze the roasted garlic out of each clove. Set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 120 ml of pasta water, then drain the pasta.

Step 3

In a large skillet, heat the garlic-infused olive oil over medium heat. Add the minced fresh garlic and sauté for 1 minute until fragrant but not browned.

Add the roasted garlic to the skillet, breaking it down with a wooden spoon or spatula to create a smooth paste. Stir in the unsalted butter and let it melt into the mixture.
