Ingredients

  • 150 grams All-purpose flour
  • 115 grams Unsalted butter
  • 50 grams Parmesan cheese, grated
  • 60 grams Sharp cheddar cheese, shredded
  • 30 grams Cream cheese, softened
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Paprika (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, salt, and black pepper.

Step 2

Add the unsalted butter, cut into small cubes, into the bowl. Use your fingers or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.

Step 3

Fold in the grated Parmesan cheese, shredded cheddar cheese, and softened cream cheese. Mix together until the dough begins to come together.

Step 4

Turn the dough out onto a lightly floured surface and gently knead it until it forms a cohesive ball. Be careful not to overwork the dough.

Step 5

Shape the dough into a log approximately 2 inches (5 cm) in diameter. Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour to firm up.

Step 6

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 7

Remove the dough log from the refrigerator and slice it into rounds about 1/4 inch (0.6 cm) thick.

Step 8

Place the shortbread rounds onto the prepared baking sheet, leaving a little space between each one.

Step 9

If desired, sprinkle a small pinch of paprika on top of each shortbread for extra color and flavor.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Step 11

Remove the shortbreads from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 12

Serve the Three Cheese Shortbreads warm or at room temperature. Store any leftovers in an airtight container for up to 5 days.
