Ingredients

  • 8 pieces Flour or corn tortillas
  • 1.5 cups Cheddar cheese, shredded
  • 1.5 cups Monterey Jack cheese, shredded
  • 1 cup Queso fresco, crumbled
  • 2 cups Red enchilada sauce
  • 0.5 cup Sour cream (optional, for garnish)
  • 2 tablespoons Cilantro, chopped (optional, for garnish)
  • 2 tablespoons Vegetable oil
  • 2 stalks Green onions, sliced thin (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium bowl, mix together the cheddar cheese, Monterey Jack cheese, and queso fresco, setting aside 1/2 cup of the mixture to use as a topping.

Step 3

Heat the vegetable oil in a small skillet over medium heat. Working one at a time, lightly warm each tortilla in the skillet for about 10 seconds per side to make them pliable. Remove and set on a plate.

Step 4

Spoon about 3 tablespoons of the cheese mixture into the center of each tortilla. Roll each tortilla tightly and place it seam-side down in a greased 9x13-inch baking dish.

Step 5

Pour the red enchilada sauce evenly over the rolled tortillas, making sure they are thoroughly covered.

Step 6

Sprinkle the reserved 1/2 cup cheese mixture evenly over the top of the enchiladas.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.

Step 8

Remove from the oven and let cool for 5 minutes. If desired, garnish with sour cream, chopped cilantro, and sliced green onions before serving.

Step 9

Serve warm and enjoy these cheesy, savory enchiladas with your favorite sides like rice and beans!
